I mostly went with this one from taste.com.au, although I adjusted a couple of things.
I didn't add sugar to the raspberry jelly (it meant the jelly was more tart, and a better flavour on the tongue) and I didn't add coconut to the cream topping.
And because I used a fairly shallow pan, I set a ring of raspberries around the circumference of the tart to act as an 'edge' for the jelly to go in.
All in all, pretty good. I might make another one at some point - still have half a pack of Nice biscuits and half a pack of Iced VoVos left!
