From a Czech friend:
2.2 kg peeled citrus fruit (all white pith removed) chopped into small pieces
2 lemons, one peeled, keep the peel or preferably just the zest of the second
6 cloves
3 star anise
Piece of fresh ginger, finely chopped
3 cinnamon sticks
900 g raw sugar
50 ml Rum (optional)
approx. 8 jars (250 ml)
Mix all ingredients (apart from alcohol if used) in an ovenproof dish and bake for 35 min at 200 C. Stir once (or when you see bits turning brown). Fill into sterilised jars, seal and leave to cool upside down.
Once opened, keep in the fridge and use within 4 days.
