For my family, the quintessential Christmas cookies are O'Henrys/Scotcheroos (my family calls them O'Henrys, everyone else calls them Scotcheroos) and krumkake. You can google scotcheroo recipes, they're common and easy, but krumkake requires a special appliance to make. (It's a Norwegian delicacy.)
