I'm looking online and it seems there's a slew of "new" mooncakes that have interesting and unusual fillings, and looking at them, I'm pretty sure plenty of them could be made vegan.
I think the only thing that's non-vegan in the original mooncake is the salted egg yolk, and you can skip that entirely if you don't want to.
