I had never watched after 1, but when my older child got into Star Wars, we tried the 4,5,2,3,6 approach (pretending 1 didn't happen at all, because it was so annoying).
It worked ok, in particular because 3 is *so* upsetting (distressed child crying "why did Anakin have to turn to the dark side!" and needing much comforting), being able to follow that immediately with 6 is very restorative.
(but any way is fine, honestly, you probably get different things out of seeing them in a different order, and in any case I probably have 4-6 almost memorised through tens and tens of watches as a child, but was very meh about 1-3, so that affects things too)
