Erica’s Pumpkin Ketchup
1 c canned pumpkin (I believe sweet potato or butternut squash puree might also work)
4 t beet liquid (see below for how to make beet liquid)
5T packed brown sugar (some people like it a little sweeter, so you can taste and add more if desired)
1-1/4t salt
1/2c white vinegar
1/2t onion powder
2-4T water (as need to achieve desired consistency)

Combine ingredients except for the water in a blender and blend until smooth. Add more beet liquid if needed to achieve desired color. Add 2-4T water to achieve ketchup consistency.
(Note I made my first batches without the blender, but it looks more like real ketchup if you put it in the blender)

Do you use it like regular ketchup, or do you put it on different dishes? Sounds fascinating, though!

(I don't see anywhere how to make beet liquid. Am I missing a link or something?)

I'm assuming you need a juicer to make beet juice? :)
