So it seems to be going okay?
I was supposed to go for an abdominal ultrasound yesterday, and forgot that I was supposed to fast from midnight last night, so I had breakfast, and only after I'd had breakfast did I remember that I shouldn't have eaten.
Oops.
Had to reschedule for Monday. *sigh*
There have been temptation moments, big things and little. A little shortbread sitting on the edge of the cup of tea I bought at the RSL club on Tuesday where I was sheltering from the 35C dry and windy heat. The chocolate on offer at bible study last night. The prospects for dinner when the power went off around lunchtime yesterday and didn't come back on by dinnertime.
It's amazing how much you don't think about food and what's in it until you're trying to avoid certain foods. Can't have a cup of milk or a slice of cheese anymore, biscuits and crackers are right out. And as much as I love salads, they take time to prepare, and I'm lazy.
That said, I've worked out a really amazing recipe for chickpeas and bean salad with garden herbs (parsley, basil, perennial onions, and coriander) and lemon juice. Also: turkey is very tasty (but omg, HUGE to cook). And a morning smoothie isn't actually that difficult, so long as you prepare first.
Also: the strength of coconut milk very much depends on the brand. I bought four tins of coconut milk, and have an 89%, 70% 58% and 49% coconut solids. Which I never realised before. No wonder the 89% coconut solids is so expensive. (But also so tasty!)
I have to get some fish today. I'm tired of chicken and turkey, and would like something else. I think I could afford a whole salmon, so long as I made stock out of it and used that for noodle broth or something...

I did not know that about coconut milk. I may go check some out.

In future, I'd use the higher coconut flesh content for things that need more of the coconut taste, and the lower one for things where the coconut is just a booster (ie. curry).
